Easy Coconut Cake
1 Box White Cake Mix
2 8 oz containers of Sour Cream
2 7 oz Frozen Coconut
2 C. White Sugar
1 12 oz container Cool Whip
Make the cake according to package directions making either 3 layers or 2 layers and splitting them into 4 layers.
Mix Sour Cream, Frozen Coconut (reserve some for garnish) and Sugar and this makes the filling. Use this between the layers and put on top. Finish the sides and over the top with Cool Whip.
Put fresh or frozen coconut over the cake.
If possible, plan ahead and make this cake at least the day before serving. Store in the refrigerator.

Myrtle Beach Quilt Party 2010
Today is Sunday - my quiet day. I am getting ready to go to Myrtle Beach Quilt Party for the 2nd time. I had a great time last year but I believe this year will be even better. My clothes are washed and ready for the suitcase and I have gotten together my patterns and fabrics. Can you tell - I am excited!
and Saturday's class is "Flying Free" taught by Sue Lyford.
I have my fabrics gathered for both classes but in case I need something extra, there will be lots more available there from the selection of Merchants that participate.
So when dark thirty arrives each evening, we will find a nice place to relax - make new friends and spend time with old ones - Walk on the beach if its not too chilly or windy - and maybe even - have a little red wine ? Martini ? Margarita? I love red ----
My first class is "Candy is Dandy" taught by Pattie Bethune and it starts Thursday morning. We sew all day on Thursday & Friday ---------- but do other things in the evening.
I am using my new favorite colors - Teal, Turquoise &
Lime greens - I almost snuck some pink or purple in - but I remained disciplined - at least so far.

My Christmas Wishes come true
Since my 1st granddaughter was born, I have dreamed of taking her to see "The Nutcracker". I am so excited because this year it will finally become a reality. I will take both of my granddaughters to see it next Sunday. Oh the fun we will have.

A New Granddaughter
On October 4th, I had a new Granddaughter born to Matt & Shannon. She is a little tiny thing at just under 6 pounds and a little early but she is healthy and happy. Her name is Gracen Olivia Long.

Better Sight today!
Today I take my dear husband for cataract surgery. He is so young to go through this surgery but he really needs it. Oh how long has he hidden from us that he just could not see out of that eye! I think it is a terrific birthday present for me!
